Mochi is made by soaking glutinous sweet rice in water before steaming, then smoothly pounding it with a pestle until the grains are gone.
Japan has long observed the tradition of believing in divinity of rice production. Any celebratory day such as New Year’s Day calls for this essential ingredient that is said to bring good luck.
Generally, the Kanto region uses squared mochi, while the Kansai region uses round mochi.
